The official word:

We have licensed Williams Entertainment to develop a unique version of DOOM

for Nintendo's U-64. It is to be available for the consumer release of the

platform.

There is no DOOM III (or any other non DOOM/DOOM II game) in development for

any other platform. DOOM is being developed or development deals are being

discussed for the following platforms:

Mac: working

3DO: working

PS-X: dealing

Saturn: dealing

SNES: dealing (I didn't think it could be done either...it can!)
